About Akaushi Cattle

Whitehedge Cattle Co. is a small, family-run operation proudly raising Akaushi cattle, a unique Japanese breed known around the world for exceptional beef quality. Akaushi, meaning “Red Cow” in Japanese, is one of the Japanese cattle breeds associated with Wagyu. The breed was developed in Japan through generations of careful selection, creating cattle known for their ability to produce exceptionally tender, flavorful beef with abundant intramuscular marbling. Unlike the black cattle most people picture when they hear the word Wagyu, Akaushi are traditionally red to reddish-brown. Their distinctive genetics are valued not only for marbling, but also for producing a rich eating experience while maintaining the practical traits needed in a cattle herd. Akaushi cattle remain relatively uncommon compared with traditional American beef breeds, which is part of what drew us to them. We love having the opportunity to raise something a little different and to introduce more people to this special breed. At Whitehedge Cattle Co., we're at the very beginning of our cattle journey. We're starting with a small herd, learning along the way, and focusing on quality over quantity as we thoughtfully grow our program. Every animal in our pasture is part of the beginning of our story—and we can't wait to see where our little herd takes us.
